The grapes are harvested by hand early to preserve the natural acidity, collected in crates in the coolest hours of the morning and left in the cold store for about 10 hours. It is later destemmed and immediately pressed with no maceration. The resulting must is left to decant for 72 hours at a temperature of 4°C, before being transferred and cleaned of its gross lees. Fermentation takes place at a controlled temperature of 15°C with selected yeasts. The wine is then stored on the fine lees at a temperature of 10°C for three months, carefully avoiding the malolactic fermentation. After this, a slow second fermentation in autoclaves (“Charmat o Martinotti lungo” method with prolonged élevage on the yeasts for about 4 months), the cold stabilisation and the bottling – approximately 5 months after the second fermentation.
A light and exclusive pink color that brings to mind rose petals with lively and luminous reflections. Fine perlage, dense and persistent. Bright-white foam, durable and elegant. The nose shows aromas of fresh fruit (mainly citrus and exotic fruits), very intense and inviting: above all pink grapefruit, bergamot and passion fruit. The palate transmits great freshness, liveliness, fullness and creaminess, with a savory finish and a pleasant balance between the components.
