“On the way up to Fattoria di Montestigliano, overlooking the vineyard, stands the old Monta Taurina di Vaccareccia (cattle breeding station). Its story tells us of the coupling of bulls with young and fertile “Manze” (heifers), after which this fresh and fragrant white wine takes its name.”
Produced from Vermentino and Trebbiano grapes.
The grapes are harvested by hand in the coolest hours of the morning, when the berries have reached perfect ripeness and their skin has turned a lovely golden-yellow. They are immediately crushed and destemmed very gently, and the resulting must is placed in stainless steel vats and left to decant for 72 hours at a temperature of 5°C. The wine is then transferred and alcoholic fermentation takes place at a controlled temperature of 15°C, which gives the wine its fresh, fruity aromas. After fermentation it is stored in steel, and left to rest on the fine lees for around 4 months at 10°C. Then, 5 months after harvest, the wine is blended, stabilised and bottled.
It has a bright straw-yellow colour with greenish reflections. The bouquet is intense and fruity with subtle varietal notes of white peach, bergamot and papaya. On the nose it is gently balsamic with delicate hints of sage leaves, and a distinct mineral backdrop. The freshness and acidity of this wine make it a delight for the palate, with a wonderfully balanced and rounded flavour, topped off with a marked minerality.
SERVING SUGGESTION: serve at a temperature of 8°C in medium-sized wine glasses.
FOOD PAIRING: perfect with cold cuts and cheese appetisers and superb alongside any fish dish.
