“On the ascent to Fattoria di Montestigliano, stands the old Monta Turina “Vaccareccia” (Bulling station), which overlooks the vineyard, from which comes this fresh, fruity and round wine.”
Obtained from Sangiovese and Ciliegiolo grapes
The grapes are selected in the vineyard and harvested by hand, immediately crushed and destemmed and carried into heat-conditioned steel tanks. Fermentation is carried out jointly for the two vines (co-fermentation) at a maximum temperature of 28° C. Maceration is managed with daily operations of short pumping over and delestage and lasts a maximum of 10 days. After racking, the wine undergoes malolactic fermentation in stainless steel and from here a part of the batch (about 30%) is placed in 225 liters French oak barrels (barriques), where it remains in aging for 8 months. The rest of the quantity matures in stainless steel on the fine lees. The operations of assembly, stabilization and bottling follow, carried out by the end of the summer following the harvest.
Lively, brilliant and luminous ruby red colour. Delicate fruity intensity on the nose with hints of small ripe black and red fruits (cherry, blackberry, blueberry, raspberry); vivid and well defined balsamic hints of thyme and spicy notes of pink pepper and vanilla in the background; a faint perception of cocoa powder in the end. Round taste with lively and enveloping tannins and a fresh, sapid and persistent finish.
SERVING SUGGESTION: serve at a temperature of 16°C in medium-sized wine glasses.
FOOD PAIRING: perfect to accompany structured first courses based on pasta, white and red grilled meat, game. Also excellent as a wine for meditation.
