“On the way up to Fattoria di Montestigliano, overlooking the vineyard, stands the old Monta Taurina di Vaccareccia (cattle breeding station). Here the fertile bulls took their “Primo Salto” (first jump), which gives its name to our first wine.”
A pleasing rosé whose freshness is enhanced by the early harvest of Sangiovese grapes.
The grapes are harvested by hand in the coolest hours of the morning before being crushed, destemmed and subjected to a very brief, light pressing to minimise colour and tannin extraction. The resulting must is left to decant for 72 hours at a temperature of 5°C, before being transferred and cleaned of its gross lees. Fermentation takes place at a controlled temperature of 15°C in stainless steel vats. The wine is then left to rest on the fine lees for 4 months at 10°C. Then, 5 months after harvest, the wine is stabilised and bottled.
Its delicate, glossy pink colour brings to mind the soft tones of white onion peel. The delightful bouquet of white flowers, in particular acacia, and exotic fruits, above all mango and ripe papaya, is rich and inviting, and sits against a backdrop of Mediterranean herbs. In the mouth it is lively, with great acid tension and a rich aromatic character that end in a sapid, persistent and harmonious finish.
SERVING SUGGESTION: serve at a temperature of 8°C in medium-sized wine glasses.
FOOD PAIRING: perfect for an aperitif or alongside any kind of appetiser, from both land and sea.
